Kimchi making experience : Learn to cook tradition

The SAS Culture Group recently gathered for an unforgettable kimchi-making workshop, diving hands-first into one of Korea’s most beloved culinary traditions. This vibrant and interactive experience wasn’t just about food, it was a celebration of culture and the art of fermentation.

Kimchi is more than a side dish in Korea; it’s a symbol of heritage, family, and the changing seasons. Under the guidance of a local kimchi master, our group learned the secrets behind this iconic dish, from selecting the freshest ingredients to mastering the perfect balance of spices. The workshop began with an introduction to the history and significance of kimchi, highlighting its role in Korean meals and its recognition as a UNESCO Intercultural Heritage element.

The real fun started when we rolled up our sleeves and got to work. Armed with Napa cabbage, radishes, garlic, ginger, and gochugaru (Korean red pepper flakes), we carefully prepared each ingredient. The process was both messy and rewarding, salting the cabbage, rinsing it thoroughly, and mixing the spicy paste with our hands. Laughter filled the room as we compared techniques, shared tips, and embraced the tactile joy of kimchi-making.

After assembling our kimchi, we learned about the fermentation process, which transforms the ingredients into the tangy, spicy, and umami-rich dish Koreans cherish. Each participant took home a jar of their homemade kimchi, along with instructions on how to care for it as it ferments.
Beyond the practical skills, the workshop was a chance to connect with Korean culture on a deeper level. We discussed the regional variations of kimchi, its health benefits, and its place in Korean festivals and daily life. The session ended with a tasting of freshly made kimchi and traditional banchan (side dishes), giving us a true taste of Korean hospitality.

The kimchi-making workshop was more than just a culinary activity, it was a hands-on cultural exchange. For the SAS Culture Group, it was an opportunity to bond, learn, and create something meaningful together. As we left with our jars of kimchi, we carried not just a delicious souvenir, but also a new appreciation for the traditions that shape Korean cuisine.
